Food Photo Friday--Soft Sugar Cookies



Valentines Day just wouldn't be complete without sugar cookies!   After trying loads of recipes I finally settled on this one.  It has sour cream in it, and how could that be a bad thing?  Use your favorite frosting or use the recipe included, or ice them, like the cookies pictured above.  I happened across a really great recipe for icing, too, if you are so inclined.   Let me know what you think!


Soft Sugar Cookies

1 cup butter
1 1/2 cups sugar
2 eggs
1 tsp. vanilla
1 cup sour cream
5 cups sifted flour
2 tsp. baking powder
1 tsp. soda
1/2 salt

Cream butter, and sugar together.  Add the eggs and vanilla, mix well.  Whisk dry ingredients together and add them alternately with the sour cream.  Chill.  Roll out to a fat 1/4 inch, then cut.  Bake at 350 degrees until light brown around the edges, about 10-12 minutes depending on your oven.  Makes about 5 dozen 3" cookies.


Icing

2 1/2 cups powdered sugar
1 Tbsp. butter-softened
2 Tbsp. water
1 Tbsp. light corn syrup
1/2 tsp. vanilla
food color, if desired

Combine powdered sugar, water, 1 Tbsp. butter, corn syrup and 1/2 tsp. vanilla in a small mixer bowl; mix until powdered sugar is moistened.  Mix at medium speed until smooth, adding additional water if necessary, to reach desired glazing consistency.  Tint with food color, if desired. 


Frosting

1/2 cube butter--softened
1 lb. powdered sugar
canned milk (evaporated)

Cream the butter, add the powdered sugar and milk alternately until it is the right consistency.  Spread on cookies.
